Instructions
Heat 2 tbsp olive oil in a Dutch oven. Cook chicken with chili powder, cumin, salt, and pepper until no longer pink. Transfer to a bowl.
Add remaining oil, cook apples and onions with salt until softened, then combine with chicken.
Melt butter, whisk in flour, then gradually add chicken stock and milk. Cook until thickened.
Stir in chicken-apple mixture and beans. Simmer for 5 minutes, add cheese until melted. Serve hot.
Notes
For extra flavor, top with sour cream, scallions, or cilantro before serving.
