A hearty and flavorful chili combining tender chicken, sweet apples, and beans, perfect for a comforting meal.

Ingredients

olive oil

  • 0.25 cup olive oil (divided)

chicken tenders

  • 1.5 lbs chicken tenders (cut into bite-size pieces)

chili powder

  • 4 tsp chili powder

ground cumin

  • 2 tsp ground cumin

apples

  • 2 pieces apples (peeled and cut into 1/2-inch cubes)

medium onion

  • 1 medium onion (chopped)

unsalted butter

  • 4 Tbsp unsalted butter

all-purpose flour

  • 0.25 cup all-purpose flour

chicken stock or storebought

  • 2 cups chicken stock or storebought

milk

  • 0.75 cup milk

canned beans

  • 2 15 oz. cans of pinto or white beans (drained and rinsed)

shredded cheese

  • 2 cups shredded Monterey or Mexican blend cheese (about 8-ounce bag)

salt and pepper

  • Kosher salt and pepper

Instructions 

  • Heat 2 tbsp olive oil in a Dutch oven. Cook chicken with chili powder, cumin, salt, and pepper until no longer pink. Transfer to a bowl.
  • Add remaining oil, cook apples and onions with salt until softened, then combine with chicken.
  • Melt butter, whisk in flour, then gradually add chicken stock and milk. Cook until thickened.
  • Stir in chicken-apple mixture and beans. Simmer for 5 minutes, add cheese until melted. Serve hot.

Notes

For extra flavor, top with sour cream, scallions, or cilantro before serving.
