Instructions
Cook pasta in salted boiling water until al dente, then drain and save some pasta water.
Sauté sausage in olive oil until browned, then remove from skillet.
Cook onion and garlic in the same skillet until soft and fragrant.
Add chicken broth and heavy cream, simmer until slightly thickened, then stir in Parmesan, salt, pepper, and red pepper flakes.
Mix in spinach, sausage, and pasta; toss until spinach wilts and everything is coated. Add reserved pasta water if needed.
Notes
For a lighter version, use half-and-half instead of heavy cream.
