A flavorful and creamy pasta dish featuring chicken apple sausage, spinach, and Parmesan cheese, perfect for a quick weeknight dinner.

Ingredients

Meat

  • 1 lb chicken apple sausage (sliced into 1/4-inch rounds)

Pasta

  • 12 oz pasta (penne, rotini, or farfalle)

Oils & Aromatics

  • 1 tablespoon olive oil
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)

Sauce & Dairy

  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup Parmesan cheese (grated)

Vegetables

  • 2 cups baby spinach
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes ((optional))
  • 1 tablespoon fresh parsley (chopped (optional))

Instructions 

  • Cook pasta in salted boiling water until al dente, then drain and save some pasta water.
  • Sauté sausage in olive oil until browned, then remove from skillet.
  • Cook onion and garlic in the same skillet until soft and fragrant.
  • Add chicken broth and heavy cream, simmer until slightly thickened, then stir in Parmesan, salt, pepper, and red pepper flakes.
  • Mix in spinach, sausage, and pasta; toss until spinach wilts and everything is coated. Add reserved pasta water if needed.

Notes

For a lighter version, use half-and-half instead of heavy cream.
