Ingredients

Protein

  • 2 cups cooked chicken breast, shredded or diced

  • 1 large ripe avocado, diced

Dairy & Condiments

  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 cup cooked rice or cilantro-lime rice
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 4 large flour tortillas (burrito size)
  • 1 tablespoon olive oil or butter, for pan-toasting
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1/2 teaspoon garlic powder

Instructions 

  • Mix chicken, ranch dressing, salt, pepper, and garlic powder until coated.
  • Gently fold in avocado, cheese, lettuce, tomatoes, and cilantro.
  • Warm tortillas until soft and pliable.
  • Divide rice on tortillas, then add chicken mixture.
  • Fold sides and roll up tightly; toast in skillet with oil until golden.
  • Slice if desired and serve warm with extra ranch dressing.

Notes

For extra flavor, add a squeeze of lime or hot sauce.
