A delicious and hearty dish combining tender chicken bites, roasted sweet potatoes, and crunchy toasted pecans for a satisfying meal.

Olive Oil

Sweet Potatoes
2lbsweet potatoes(peeled, seeded, and cut into 1-inch cubes)
Maple Syrup
2tablespoonsmaple syrup(divided)

Chicken Thighs
1.5lbchicken thighs(skinless and boneless)
Italian Seasoning

Instructions
Toss sweet potatoes with 2 tablespoons of olive oil, 1 tablespoon of maple syrup, salt, pepper, and garlic powder. Roast at 400°F (200°C) for 25-30 minutes.
While potatoes roast, cut chicken into bite-sized pieces. Season with Italian seasoning, salt, pepper, and cook in 1 tablespoon of olive oil until cooked through, about 8-10 minutes.
Toast pecans in a dry skillet over medium heat until fragrant, about 3-5 minutes. Chop and set aside.
In the last 5 minutes of roasting, add thyme leaves to sweet potatoes and continue roasting.
Serve chicken bites with roasted sweet potatoes topped with toasted pecans and a drizzle of maple syrup.
Notes
For extra flavor, sprinkle with additional herbs or a squeeze of lemon before serving.
