Instructions
Preheat oven to 400F (200C).
Mix seasonings, then combine with onion, bell pepper, rice, and spices in a baking dish.
Whisk chicken broth, chilies, oil, and tomato paste; pour over rice mixture.
Add corn, beans, and chicken; cover with foil and bake 65-70 mins.
Remove foil, top with cheddar, bake 5-10 mins until golden, then cool slightly and garnish with herbs and salsa.
Notes
Use cooked chicken for best flavor and texture.
