A flavorful baked chicken burrito casserole that's easy to prepare and perfect for a satisfying meal.

Ingredients

Seasoning Mix

  • 1 tbsp chili powder
  • 0.5 tsp cayenne pepper
  • 2 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 cup white onion (chopped)
  • 1 red bell pepper (diced) red bell pepper
  • 1 cup uncooked brown rice
  • 3 cups chicken broth (low sodium)
  • 2 green chilies (deseeded and chopped) green chilies
  • 1 tbsp olive oil
  • 2 tbsp tomato paste
  • 1 cup corn kernels (drained or frozen)
  • 14 oz black beans (drained and rinsed)
  • 5 cups cooked chicken (shredded)
  • 1.25 cups cheddar (shredded)

Cilantro (chopped)

Green onion (chopped)

Avocado (chopped)

Salsa

Instructions 

  • Preheat oven to 400F (200C).
  • Mix seasonings, then combine with onion, bell pepper, rice, and spices in a baking dish.
  • Whisk chicken broth, chilies, oil, and tomato paste; pour over rice mixture.
  • Add corn, beans, and chicken; cover with foil and bake 65-70 mins.
  • Remove foil, top with cheddar, bake 5-10 mins until golden, then cool slightly and garnish with herbs and salsa.

Notes

Use cooked chicken for best flavor and texture.
