A quick and flavorful pasta salad combining grilled chicken, crisp romaine, and a creamy Caesar dressing for a satisfying meal.

Ingredients

Pasta

  • 8 oz penne or rotini pasta

Protein

  • 2 cups cooked and sliced grilled chicken breast

Vegetables

  • 2 cups chopped romaine lettuce
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced

Cheese

  • 1/4 cup grated Parmesan cheese

Dressing

  • 1/2 cup Caesar salad dressing (homemade or store-bought)

Croutons

  • 1 cup croutons (preferably Parmesan or garlic-flavored)

Seasoning

  • to taste none Freshly ground black pepper (to taste)
  • optional none chopped fresh parsley for garnish (for garnish)

Instructions 

  • Cook pasta until al dente, then rinse under cold water.
  • Combine pasta, chicken, romaine, tomatoes, onion, and Parmesan in a large bowl.
  • Pour dressing over the mixture and toss gently.
  • Top with croutons and black pepper just before serving.
  • Garnish with parsley if desired.

Notes

For extra flavor, toss the salad with a little lemon juice or add more Parmesan.
