A delicious and easy-to-make pasta salad featuring tender chicken, crisp romaine, and classic Caesar flavors.

Ingredients

Protein

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 tablespoons olive oil (for cooking chicken)
  • 1 teaspoon garlic powder (seasoning)
  • 1 teaspoon onion powder (seasoning)
  • 1/2 teaspoon paprika (seasoning)
  • 1/4 teaspoon black pepper (seasoning)
  • 1/4 teaspoon salt (seasoning)
  • 1 lb pasta (rotini, penne, or farfalle)
  • 1 cup mayonnaise
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup Caesar salad dressing (good quality bottled or homemade)
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt (or to taste)
  • 1/2 cup milk or cream (to thin the dressing if needed)
  • 1 cup chopped romaine lettuce
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup croutons

Instructions 

  • Cook the pasta according to package instructions, then drain and set aside.
  • Season and cook the chicken breasts in olive oil until cooked through, then slice.
  • Mix mayonnaise, Parmesan, Caesar dressing, lemon juice, Dijon mustard, garlic, salt, pepper, and milk to make the dressing.
  • Combine cooked pasta, sliced chicken, lettuce, tomatoes, red onion, and croutons. Toss with the dressing.
  • Serve immediately or chill before serving.

Notes

For extra flavor, marinate the chicken in some of the dressing before cooking.
