A quick and delicious pasta salad combining tender chicken, crunchy croutons, and classic Caesar flavors.

Ingredients

Protein

  • 2 pieces skinless, boneless chicken breasts
  • 3/4 teaspoon salt
  • 3/4 teaspoon ground black pepper
  • 3/4 teaspoon garlic powder
  • 1 tablespoon oil (like olive oil)

Pasta

  • 8 ounces dry penne pasta
  • 1 1/2 cups croutons

Vegetables & Cheese

  • 3 cups romaine lettuce, chopped
  • 3/4 cup Caesar dressing
  • 1/3 cup grated parmesan cheese

Instructions 

  • Season the chicken with salt, pepper, and garlic powder.
  • Cook the chicken in oil until golden and cooked through, then cool and cube.
  • Cook pasta according to package, then drain and cool.
  • Combine chicken, pasta, croutons, lettuce, dressing, and cheese; toss to mix.
  • Serve immediately.

Notes

For extra flavor, add a squeeze of lemon or some freshly cracked pepper before serving.
