Ingredients

Protein

  • 1 pound boneless skinless chicken breast

Cooking

  • 2 tablespoons cooking oil
  • Salt and black pepper to taste Salt and black pepper
  • ½ teaspoon garlic pepper

Sauces and Condiments

  • 4 tablespoons pesto sauce

Bread

  • 4 ciabatta buns ciabatta buns

Cheese

  • 8 slices fresh mozzarella

Fresh Herbs

Vegetables

  • 1 large fresh tomato

Drizzle

  • 2 tablespoons balsamic reduction

Instructions 

  • Season chicken with salt, black pepper, and garlic pepper.
  • Cook chicken in oil over medium-high heat for 4-5 minutes per side until browned and cooked through.
  • Toss cooked chicken in pesto sauce until coated.
  • Slice buns open, layer with mozzarella and tomato slices.
  • Place pesto chicken on bread, add basil, drizzle with balsamic, then close the sandwich.

Notes

For extra flavor, let the chicken rest for a few minutes before slicing.
