24ozboneless skinless chicken breasts
1.25teaspoonskosher salt(divided)
0.5teaspoonground black pepper(divided)

1smallred onion(diced (about 1 cup))
4clovesgarlic(minced (about 4 teaspoons))
4cupssliced tomatoes(halved cherry or grape or diced garden tomatoes)
0.25teaspoondried thyme
Cheese & Herbs
4ozpart-skim mozzarella pearls(scant 1 cup or cubed)
0.25cupfresh basil leaves(thinly sliced)
Instructions
Simmer ½ cup balsamic vinegar and 1 tablespoon honey until thickened (~15 min).
Pound chicken to ½-inch thickness, season with ¾ teaspoon salt and ¼ teaspoon pepper.
Cook chicken in 1 tablespoon oil over medium-high until browned (~4 min per side). Remove and keep warm.
Sauté onion in remaining oil until softened (~3 min), add garlic and cook 30 sec.
Add tomatoes, thyme, balsamic vinegar, honey, salt, and pepper; cook until tomatoes soften (~2 min). Return chicken, top with mozzarella, cover, and let melt (~2 min). Drizzle balsamic reduction and sprinkle basil before serving.
