A flavorful one-pan dish featuring tender chicken, fresh tomatoes, mozzarella, and a balsamic glaze, perfect for a quick and satisfying meal.

Ingredients

Sauce

  • 0.5 cup balsamic vinegar (divided)
  • 1 tablespoon honey (divided)

Chicken

  • 24 oz boneless skinless chicken breasts
  • 1.25 teaspoons kosher salt (divided)
  • 0.5 teaspoon ground black pepper (divided)
  • 2 tablespoons extra virgin olive oil (divided)

Vegetables

  • 1 small red onion (diced (about 1 cup))
  • 4 cloves garlic (minced (about 4 teaspoons))
  • 4 cups sliced tomatoes (halved cherry or grape or diced garden tomatoes)
  • 0.25 teaspoon dried thyme

Cheese & Herbs

  • 4 oz part-skim mozzarella pearls (scant 1 cup or cubed)
  • 0.25 cup fresh basil leaves (thinly sliced)

Instructions 

  • Simmer ½ cup balsamic vinegar and 1 tablespoon honey until thickened (~15 min).
  • Pound chicken to ½-inch thickness, season with ¾ teaspoon salt and ¼ teaspoon pepper.
  • Cook chicken in 1 tablespoon oil over medium-high until browned (~4 min per side). Remove and keep warm.
  • Sauté onion in remaining oil until softened (~3 min), add garlic and cook 30 sec.
  • Add tomatoes, thyme, balsamic vinegar, honey, salt, and pepper; cook until tomatoes soften (~2 min). Return chicken, top with mozzarella, cover, and let melt (~2 min). Drizzle balsamic reduction and sprinkle basil before serving.

Notes

Use fresh, seasonal tomatoes for best flavor.
