Ingredients

Protein

  • 1 lb chicken breast, sliced

Vegetables

  • 1 bell pepper bell pepper, sliced
  • 1 onion onion, sliced

Canned Goods

  • 1 can black beans, drained and rinsed

Grains

  • 2 cups cooked cilantro lime rice

Spices & Oils

  • 1 tablespoon fajita seasoning
  • 1 tablespoon olive oil

To Taste

  • to taste Salt and pepper

Optional Toppings

  • various avocado, salsa, sour cream (as desired)

Instructions 

  • Heat olive oil in a skillet, then cook chicken, peppers, and onion until tender, about 8-10 minutes.
  • Sprinkle fajita seasoning over the mixture and stir to coat evenly. Cook until chicken is no longer pink.
  • Layer cilantro lime rice in bowls, then top with cooked chicken and vegetables.
  • Add black beans and optional toppings like avocado or salsa. Serve warm.

Notes

For extra flavor, squeeze fresh lime juice over the bowls before serving.
