A quick and flavorful homemade chicken fried rice, perfect for a satisfying meal using leftover rice and fresh ingredients.

cooked long-grain brown rice
(preferably leftover rice)

(diced into 3/4-inch pieces)
Vegetables and Aromatics

frozen peas and carrots blend

low-sodium soy sauce
(or regular soy sauce, start with 2 tbsp and adjust)

Instructions
Season chicken with salt and pepper. Sauté in 1.5 tsp sesame oil and 1.5 tsp canola oil until cooked, about 5-6 minutes. Set aside.
Add remaining oils, sauté peas, carrots, and green onions for 1 minute.
Add garlic and cook for 1 minute. Push vegetables aside, scramble eggs in center until just set.
Return chicken, add rice, soy sauce, and season with salt and pepper. Toss until heated through. Serve with Sriracha if desired.
Notes
Use leftover rice for best texture. Adjust soy sauce for saltiness.
