A quick and flavorful dish combining tender chicken, vegetables, and rice stir-fried with savory sauces.
Ingredients

cooked day-old rice

chicken breast or thighs, diced

green onions
sliced green onions

eggs
beaten eggs

garlic, minced

Instructions
Dice chicken, chop vegetables, and beat eggs; set aside.
Cook chicken in hot oil until golden, then remove. Scramble eggs in same pan, then set aside.
Sauté garlic and ginger, add vegetables, cook until tender. Add rice, soy sauce, and optional sauces, stirring well.
Return chicken and eggs to pan, stir to combine and heat through. Garnish with green onions.
Notes
Use day-old rice for best texture and flavor.
