A hearty and nutritious soup combining tender chicken, kale, and potatoes in a flavorful broth, perfect for a comforting meal.

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1.5 cups chopped yellow onion
  • 1 tablespoon minced garlic
  • 15 ounces no-salt-added great northern beans, rinsed
  • 12 ounces boneless, skinless chicken breast or chicken tenders
  • 2 medium Yukon Gold potatoes, peeled and diced (1/2-inch)
  • 6 cups unsalted chicken broth
  • 3 thyme sprigs thyme sprigs
  • 1 teaspoon kosher salt
  • 0.5 teaspoon ground pepper
  • 3 cups chopped kale or frozen chopped kale
  • 2 tablespoons lemon juice

Instructions 

  • Heat oil in a large pot over medium heat. Cook onion until softened (~5 min), then add garlic and cook 1 min.
  • Add beans, chicken, potatoes, broth, thyme, salt, and pepper. Bring to a boil, then simmer until potatoes are tender and chicken reaches 165°F (~18 min).
  • Transfer chicken to a plate, shred with forks, then return to the soup.
  • Add kale and cook until wilted (~2 min). Stir in lemon juice and remove thyme sprigs.
  • Serve hot, garnished as desired.

Notes

For extra flavor, add a squeeze of lemon or a sprinkle of Parmesan before serving.
