15ouncesno-salt-added great northern beans, rinsed
12ouncesboneless, skinless chicken breast or chicken tenders
2mediumYukon Gold potatoes, peeled and diced (1/2-inch)
6cupsunsalted chicken broth
3thyme sprigsthyme sprigs
1teaspoonkosher salt
0.5teaspoonground pepper
3cupschopped kale or frozen chopped kale
2tablespoonslemon juice
Instructions
Heat oil in a large pot over medium heat. Cook onion until softened (~5 min), then add garlic and cook 1 min.
Add beans, chicken, potatoes, broth, thyme, salt, and pepper. Bring to a boil, then simmer until potatoes are tender and chicken reaches 165°F (~18 min).
Transfer chicken to a plate, shred with forks, then return to the soup.
Add kale and cook until wilted (~2 min). Stir in lemon juice and remove thyme sprigs.
Serve hot, garnished as desired.
Notes
For extra flavor, add a squeeze of lemon or a sprinkle of Parmesan before serving.
