Enjoy these flavorful, healthy chicken lettuce wraps that are quick to prepare and perfect for a light, satisfying meal.

Ingredients

Main

  • 1 Tablespoon avocado oil (or olive or coconut oil)
  • 1 pound ground chicken (or ground raw chicken breast or thighs)
  • 6-8 oz. white button mushrooms (finely minced)
  • 8 oz. water chestnuts (drained and minced)
  • 2 green onions green onions (sliced)
  • 2 teaspoons fresh ginger (minced)
  • 1 clove garlic (minced)
  • 1/4-1/3 cup coconut aminos (GF tamari or soy sauce)
  • optional: 1/4-1/2 teaspoon sesame oil

Lettuce

  • to taste lettuce leaves (butter lettuce, romaine, or iceberg)

Optional Toppings

  • to taste cilantro
  • to taste your favorite dipping sauce
  • 1/4 cup dijon mustard
  • 1/4 cup coconut aminos (gluten-free tamari or soy sauce)
  • a few dashes chili oil or sriracha (for a little kick)

Instructions 

  • Heat oil in a large skillet over medium heat. Cook chicken until fully cooked, about 6-8 minutes.
  • Add mushrooms, water chestnuts, and green onions. Cook 3-5 minutes until mushrooms are softened.
  • Add ginger, garlic, coconut aminos, and sesame oil (if using). Cook 1 minute, stirring to coat.
  • Scoop mixture onto lettuce leaves. Top with cilantro and dipping sauce as desired.
  • Store leftovers separately in airtight containers in the fridge for 3-4 days.

Notes

Adjust sauce quantities to avoid making wraps too soggy.
