Ingredients

Protein

  • 3 pieces boneless, skinless chicken breasts (sliced thin)

Sauces and Oils

  • 2 tablespoons soy sauce (low-sodium preferred)
  • 1 tablespoon sesame oil
  • 2 tablespoons additional soy sauce (for stir-frying)

Noodles and Vegetables

  • 8 ounces lo mein noodles
  • 1 cup bell peppers (any color, sliced)
  • 1 cup carrots (julienned)
  • 3 cloves fresh garlic (minced)
  • 1 tablespoon fresh ginger (minced)

Instructions 

  • Marinate chicken in soy sauce and sesame oil for 15 minutes.
  • Cook noodles, drain, and toss with sesame oil.
  • Sauté chicken until golden, about 5-7 minutes.
  • Add vegetables and stir-fry until tender-crisp, about 3 minutes.
  • Mix noodles with ginger and soy sauce; stir for 2 minutes.
  • Serve hot, garnished if desired.

Notes

For extra flavor, garnish with green onions or sesame seeds.
