Instructions
Preheat oven to 375°F (190°C). Roast and prepare the butternut squash, then blend with spread ingredients.
Heat the panini press or grill pan. Spread squash spread on bread, layer chicken, spinach, and cheese, then assemble the sandwich.
Grill on the panini press for 6-7 minutes or on a grill pan for 3-4 minutes per side until cheese melts.
Notes
Use a heavy pan or press to ensure even grilling and melting.
