A delicious and easy baked dish combining tender chicken, spinach, tomatoes, and cheesy rice for a satisfying meal.

Ingredients

Base

  • 1 serve cooked brown rice (or white rice)
  • 1 small chicken breast (sliced (about 100g/3.5 oz))
  • 1 small clove garlic (crushed)
  • 0.5 cup canned tomatoes
  • 1 tbsp reduced fat cream cheese
  • to taste Garlic and herb seasoning
  • to taste Oregano (leaves or ground)
  • 1 cup baby spinach leaves (shredded finely)
  • 1 tbsp parmesan cheese

Instructions 

  • Preheat oven to 200°C/390°F. Prepare a dish by lightly greasing or lining.
  • Saute chicken and garlic in a lightly sprayed pan until cooked.
  • Add tomatoes, cream cheese, seasonings, and spinach; stir until spinach wilts and cheese melts.
  • Mix in cooked rice, then transfer to the prepared dish and top with parmesan.
  • Bake until cheese is melted and lightly browned, about 10 minutes.

Notes

Use fresh herbs for best flavor and adjust seasonings to taste.
