A delicious low-carb twist on classic chicken parmesan, these zucchini boats are packed with flavorful ground chicken and cheesy goodness.

Ingredients

Vegetables

  • 4 medium zucchini (halved and hollowed)
  • 1 lb ground chicken
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 2 cloves garlic (minced)
  • 1 cup pasta sauce
  • 1/4 cup grated parmesan cheese
  • 1/2 cup shredded mozzarella cheese

Optional Topping

  • sliced fresh basil for topping basil (optional)

Instructions 

  • Preheat oven to 400°F (200°C). Spray a baking dish with cooking spray.
  • Cook ground chicken in a skillet until fully cooked, about 8-10 minutes; season with salt and pepper.
  • Add minced garlic, sauté briefly, then stir in pasta sauce and simmer for 3 minutes.
  • Cut zucchini in half lengthwise, scoop out seeds, and fill with chicken mixture.
  • Top with parmesan and mozzarella, cover with foil, and bake for 35 minutes until zucchini is tender.

Notes

For extra flavor, add fresh basil on top before serving.
