A delicious low-carb twist on classic chicken parmesan, these zucchini boats are packed with flavorful ground chicken and cheesy goodness.
Ingredients

Instructions
Preheat oven to 400°F (200°C). Spray a baking dish with cooking spray.
Cook ground chicken in a skillet until fully cooked, about 8-10 minutes; season with salt and pepper.
Add minced garlic, sauté briefly, then stir in pasta sauce and simmer for 3 minutes.
Cut zucchini in half lengthwise, scoop out seeds, and fill with chicken mixture.
Top with parmesan and mozzarella, cover with foil, and bake for 35 minutes until zucchini is tender.
Notes
For extra flavor, add fresh basil on top before serving.
