A quick and flavorful dish combining tender chicken, pasta, and vibrant pesto sauce for a satisfying meal.

Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts

Pasta

  • 8 oz pasta (penne, fusilli, or spaghetti)

Sauce

  • 1 cup pesto (homemade or store-bought)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • to taste Salt and pepper
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup reserved pasta water

Optional toppings

  • as desired cherry tomatoes or steamed green beans (for serving)

Instructions 

  • Cook the pasta in salted boiling water until al dente, then drain, reserving 1/4 cup of water.
  • Season chicken with salt and pepper, then cook in olive oil until golden and cooked through. Rest and slice into strips.
  • Sauté garlic in the same skillet, add pesto and a splash of reserved pasta water to loosen the sauce.
  • Toss cooked pasta with pesto sauce, add sliced chicken, and mix well. Adjust sauce consistency with more pasta water if needed.
  • Serve topped with Parmesan and optional cherry tomatoes or green beans.

Notes

Use high-quality pesto for the best flavor.
