A quick and flavorful stir-fry combining tender chicken, crisp vegetables, and savory ramen noodles in a delicious sauce.

Ingredients

Noodles

  • 3 packs instant ramen noodles (discard seasoning packets)

Chicken

  • 1 lb boneless skinless chicken breast (cut into bite-sized pieces)

Oils and Sauces

  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sriracha (optional, for spice)
  • 2 teaspoons cornstarch
  • 1/2 cup chicken broth

Vegetables & Aromatics

  • 1 red bell pepper red bell pepper (thinly sliced)
  • 1 cup broccoli florets
  • 2 cloves garlic (minced)

Garnishes

  • 2 green onions green onions (chopped (for garnish))

Sesame seeds

  • optional Sesame seeds (for garnish)

Instructions 

  • Cook the ramen noodles in boiling water for 2–3 minutes, then drain and set aside.
  • Whisk soy sauce, brown sugar, hoisin, sriracha, cornstarch, and chicken broth to make the sauce.
  • Sauté chicken in oils until golden and cooked through, about 5–6 minutes.
  • Add vegetables and garlic; stir-fry for 3–4 minutes until tender-crisp.
  • Combine noodles and sauce; toss to coat and heat through for 2–3 minutes.
  • Garnish with chopped green onions and sesame seeds; serve hot.

Notes

Feel free to add more spice with extra sriracha or garnish with additional sesame seeds for extra flavor.
