A fresh and flavorful chicken salad perfect for a quick lunch or light dinner, served on greens or with bread.

Ingredients

Protein

  • 6 pieces chicken breast tenderloins (cooked, cooled, and diced)
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon chopped flat-leaf parsley
  • 1 tablespoon chopped tarragon
  • 1/3 cup candied walnuts (roughly chopped)
  • 1 medium Honeycrisp apple (unpeeled and diced finely)
  • Pinch salt
  • Pinch black pepper
  • 1 teaspoon honey

Greens and bread

  • to taste lettuce or greens (optional)
  • to serve toasted brioche bread, wraps, or crackers (for serving)

Instructions 

  • Add the chicken and the rest of the ingredients up to and including the honey to a medium-large bowl, and toss gently to combine; set aside.
  • Layer greens on bread, add chicken salad, then top with another bread piece or serve as desired.

Notes

Chill the salad before serving for best flavor.
