A flavorful and healthy Chicken Shawarma Bowl packed with marinated chicken, fresh vegetables, and creamy tahini sauce.

Ingredients

Protein

  • 1.5 lbs boneless chicken thighs or breasts
  • 3 tablespoons olive oil
  • 1 piece lemon (juice of 1 lemon)
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons paprika
  • 1 teaspoon turmeric
  • 1 teaspoon cinnamon
  • 1 teaspoon garlic powder
  • 0.5 teaspoon cayenne pepper (optional, for heat)
  • to taste Salt and pepper
  • 2 cups cooked rice (quinoa, or cauliflower rice)
  • 1 piece cucumber (diced)
  • 1 cup cherry tomatoes (halved)
  • 1 red onion (thinly sliced)
  • 1 diced bell pepper
  • 2 cups lettuce or mixed greens
  • 0.25 cup fresh parsley or mint (chopped)
  • ¼ cup tahini
  • 2 tablespoons lemon juice
  • 1 clove garlic (minced)
  • Water as needed water (to thin tahini sauce)

Optional toppings

Instructions 

  • Marinate chicken with oil, lemon juice, spices, salt, and pepper; refrigerate for 30 minutes.
  • Cook chicken in a skillet over medium-high heat for 6–8 minutes per side until fully cooked. Rest and slice.
  • Whisk tahini, lemon juice, garlic, and water until smooth.
  • Assemble bowl with rice, sliced chicken, and vegetables. Drizzle with tahini sauce and garnish with herbs.

Notes

For extra flavor, add pickled onions or feta cheese as optional toppings.
