A hearty and comforting chicken soup featuring sweet butternut squash and fresh herbs, perfect for a cozy meal.

Ingredients

Main

  • 1 tablespoon olive oil
  • 1 small onion (chopped)
  • 0.5 cup celery
  • 2 to 4 cloves garlic (minced)
  • 2 to 3 cups butternut squash (peeled and cubed)
  • 0.25 teaspoon fine salt (add more as needed)
  • pinch black pepper (adjust to taste)
  • 0.5 teaspoon dried thyme (or 2 fresh sprigs)
  • 1.5 pounds chicken thighs, leg quarters or breasts (skin on or off)
  • 4 cups chicken broth
  • 0.5 cup fresh parsley or cilantro (chopped, plus more for garnish)
  • optional pumpkin seeds for garnish

Instructions 

  • Heat olive oil in a large pot, cook onion and celery until softened (~5 min).
  • Add garlic, squash, salt, pepper, bay leaf, and thyme; sauté until fragrant (~2 min).
  • Add chicken broth and chicken; bring to boil, then simmer 20-25 min until cooked.
  • Remove chicken, shred or chop, then return to soup. Stir in herbs and serve.

Notes

Feel free to garnish with pumpkin seeds for added crunch.
