Instructions
Heat olive oil in a large pot, cook onion and celery until softened (~5 min).
Add garlic, squash, salt, pepper, bay leaf, and thyme; sauté until fragrant (~2 min).
Add chicken broth and chicken; bring to boil, then simmer 20-25 min until cooked.
Remove chicken, shred or chop, then return to soup. Stir in herbs and serve.
Notes
Feel free to garnish with pumpkin seeds for added crunch.
