A quick and nutritious dish combining tender chicken, fresh spinach, and fluffy rice for a satisfying meal.

Ingredients

Rice and Water

  • 1 cup Jasmine rice rinsed
  • 2 cups Water

Chicken

  • 2 pieces Chicken breasts boneless and skinless

Garlic

  • 2 cloves Garlic minced

Vegetables

  • 2 cups Fresh spinach roughly chopped

Oils and Juices

  • 1 tablespoon Olive oil
  • 1 tablespoon Lemon juice

Spices

  • 1 pinch Paprika optional
  • to taste Salt
  • to taste Freshly cracked black pepper

Instructions 

  • Combine rinsed rice and water in a saucepan, bring to a boil, then cover and simmer until rice is tender.
  • Slice chicken breasts into strips and cook in a skillet with olive oil until lightly golden.
  • Add minced garlic and sauté briefly, then add chopped spinach and cook until wilted.
  • Stir in lemon juice and optional paprika, season with salt and pepper.
  • Serve chicken mixture over warm rice.

Notes

Feel free to add more vegetables or adjust seasonings to taste.
