A quick and nutritious dish combining tender chicken, fresh spinach, and fluffy rice for a satisfying meal.
Ingredients
Rice and Water

Jasmine rice rinsed

Water
Chicken

Chicken breasts boneless and skinless
Garlic

Garlic minced
Vegetables

Fresh spinach roughly chopped
Oils and Juices

Olive oil

Instructions
Combine rinsed rice and water in a saucepan, bring to a boil, then cover and simmer until rice is tender.
Slice chicken breasts into strips and cook in a skillet with olive oil until lightly golden.
Add minced garlic and sauté briefly, then add chopped spinach and cook until wilted.
Stir in lemon juice and optional paprika, season with salt and pepper.
Serve chicken mixture over warm rice.
