A quick and flavorful chicken stir fry packed with vegetables and a savory sauce, perfect for a weeknight dinner.

Ingredients

Sauce

  • 0.25 cup chicken broth
  • 0.25 cup tamari soy sauce (or coconut aminos)
  • 1 tablespoon dry sherry (optional) (optional)
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar (or apple cider vinegar)
  • 1 tablespoon cornstarch (or arrowroot powder)
  • 2 tablespoons avocado oil
  • 1 pound boneless skinless chicken breast (cut into 1-inch pieces)

  • 1 red bell pepper red bell pepper (deseeded and chopped)
  • 1 small carrot (thinly sliced)
  • 2 cups broccoli florets (cut into bite-sized pieces)
  • 1 small yellow onion (chopped)
  • 1 tablespoon finely grated fresh ginger
  • 4 cloves garlic (minced)
  • 1 tablespoon sesame seeds
  • 1 green onion sliced

Instructions 

  • Whisk together sauce ingredients in a small bowl and set aside.
  • Cook chicken in a skillet with oil until browned, then remove.
  • Stir-fry vegetables in the same pan until tender, then add chicken back with ginger and garlic.
  • Add sauce and cook until thickened, about 1-2 minutes.
  • Garnish with sliced green onion and sesame seeds before serving.

Notes

Use fresh ginger and garlic for best flavor. Adjust seasoning to taste.
