Chicken & Sweet Potato Wrap

A delicious and healthy chicken and sweet potato wrap perfect for a quick lunch or dinner.

Ingredients

Sweet Potatoes

  • 2 medium sweet potatoes, scrubbed and cut into ¼ -inch thick slices, halved if large
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon paprika
  • ¾ teaspoon ground cumin, divided
  • ¾ teaspoon ground coriander, divided
  • ¼ teaspoon salt
  • 1 medium ripe avocado
  • 1 teaspoon chopped fresh thyme
  • 4 8-inch white flour tortillas
  • cups shredded skinless rotisserie chicken
  • ¼ cup loosely packed fresh cilantro leaves

Instructions 

  • Preheat oven to 425°F (220°C).
  • Toss sweet potatoes with oil, paprika, ½ tsp cumin, ½ tsp coriander, and salt. Roast 25-30 mins until tender. Cool 5 mins.
  • Mash avocado with thyme, salt, remaining cumin and coriander.
  • Spread avocado mixture on tortillas, add sweet potatoes, chicken, cilantro, roll up and serve.

Notes

Feel free to add hot sauce or lime for extra flavor.
