Ingredients

Protein

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 1 bell pepper chopped
  • 1 can (15 oz/425g) black beans, rinsed and drained
  • 1 can (15 oz/425g) corn, drained
  • 1 cup (180g) long-grain rice, uncooked
  • 2 cups (475ml) chicken broth
  • 1 packet (1 oz/28g) taco seasoning
  • 1 cup (115g) shredded cheddar cheese

Optional toppings

  • sour cream, salsa, avocado, cilantro (as desired)

Instructions 

  • Dice chicken, then sauté onion and bell pepper in olive oil.
  • Add chicken and taco seasoning; cook until browned.
  • Stir in beans, corn, rice, and broth; bring to a boil, then simmer 20–25 minutes.
  • Sprinkle with cheese and broil 2–3 minutes until melted.
  • Serve with optional toppings like sour cream, salsa, avocado, and cilantro.
