Ingredients

  • 1.5 cups shredded cooked chicken
  • 1 can black beans (drained and rinsed)
  • 1 can corn kernels (drained)
  • 2 cups chicken broth
  • 1 can diced tomatoes with green chilies (undrained)
  • 1 tablespoon olive oil
  • 0.5 cup chopped onion
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon salt

Instructions 

  • In a large pot, heat olive oil over medium heat and sauté chopped onion until translucent.
  • Add shredded chicken, beans, corn, diced tomatoes, chicken broth, and spices. Stir well.
  • Bring to a boil, then reduce heat and simmer for 15 minutes to allow flavors to meld.
  • Adjust seasoning as needed and serve hot.

Notes

You can top the soup with shredded cheese or fresh cilantro for extra flavor.
