A flavorful and hearty pasta dish combining tender chicken, fresh vegetables, and a rich tomato sauce.

Ingredients

Pasta

  • 250 g pasta
  • 1 tablespoon olive oil
  • 20 g butter
  • 350 g chicken breast (cut into 1-inch cubes)
  • 1 medium onion (finely sliced)
  • 225 g closed cup mushrooms (sliced)
  • 4 cloves garlic (finely chopped)
  • 0.5 teaspoon red chili flakes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 tablespoons tomato paste
  • 2 cans crushed tomatoes (14 oz (400 g) each)
  • 75 g baby spinach
  • 0.33 cup grated Parmesan

Salt and freshly ground black pepper

Instructions 

  • Cook pasta in salted boiling water until al dente, then drain.
  • Heat olive oil and melt butter in a large pan. Cook chicken until golden, then add onion and mushrooms; cook until tender.
  • Add garlic, chili flakes, basil, oregano; cook for 1 minute. Stir in tomato paste and crushed tomatoes; simmer for 5 minutes.
  • Mix in spinach, cook for 1 minute, then add cooked pasta. Toss well and stir in Parmesan. Season to taste and serve.

Notes

For extra flavor, top with additional Parmesan and fresh herbs if desired.
