Instructions
Heat oil or butter in a large pot. Sauté onion, celery, and carrots until soft, about 5-7 minutes.
Add garlic and thyme; cook for 1 minute until fragrant.
Stir in wild rice, chicken broth, salt, and pepper. Bring to a boil, then simmer for 45 minutes until rice is tender.
Whisk flour with milk, then slowly add to the soup while stirring. Add cooked chicken and simmer 10-15 minutes until thickened.
Adjust seasoning as needed. Serve hot, garnished with parsley if desired.
