  • 1 cup wild rice, rinsed
  • 4 cups chicken broth (preferably low sodium)
  • 2 cups cooked chicken breast, shredded or diced
  • 1 tablespoon olive oil or butter
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 2 medium carrots, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 0.5 teaspoon salt, or to taste
  • 0.25 teaspoon black pepper
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk or half-and-half
  • optional Fresh parsley for garnish

Instructions 

  • Heat oil or butter in a large pot. Sauté onion, celery, and carrots until soft, about 5-7 minutes.
  • Add garlic and thyme; cook for 1 minute until fragrant.
  • Stir in wild rice, chicken broth, salt, and pepper. Bring to a boil, then simmer for 45 minutes until rice is tender.
  • Whisk flour with milk, then slowly add to the soup while stirring. Add cooked chicken and simmer 10-15 minutes until thickened.
  • Adjust seasoning as needed. Serve hot, garnished with parsley if desired.
