Instructions
Preheat oven to 350°F. Prepare vegetables and butterfly chicken.
Whisk together olive oil, mustard, syrup, salt, pepper, and thyme to make dressing.
Toss chicken, apples, vegetables, and shallot with dressing on a large baking sheet. Reserve some dressing.
Bake for 25 minutes until chicken is cooked and vegetables are tender. Drizzle with reserved sauce before serving.
Notes
Use fresh thyme for best flavor. Adjust salt to taste.
