A flavorful and wholesome dish featuring tender chicken breasts cooked with sweet apples, roasted vegetables, and a tangy maple Dijon sauce.

Ingredients

Protein

  • 16 oz chicken breasts (butterflied)

Fruits

  • 2 cups Ruby Frost Apples (chopped, about 1 apple)

Vegetables

  • 2 cups brussels sprouts (halved and stems removed, about 1/2 bag)
  • 2 cups butternut squash (chopped, can substitute sweet potato)

Other

  • 1/2 shallot shallot (sliced)
  • 0.25 cup olive oil
  • 2 tbsp dijon mustard
  • 1 tbsp Apple Cider Vinegar
  • 1 tbsp pure maple syrup
  • 0.5 tsp black pepper
  • 0.5 tsp kosher salt (reduce if using table salt)
  • 4 sprigs fresh thyme (or 1/2 tsp dried)

Instructions 

  • Preheat oven to 350°F. Prepare vegetables and butterfly chicken.
  • Whisk together olive oil, mustard, syrup, salt, pepper, and thyme to make dressing.
  • Toss chicken, apples, vegetables, and shallot with dressing on a large baking sheet. Reserve some dressing.
  • Bake for 25 minutes until chicken is cooked and vegetables are tender. Drizzle with reserved sauce before serving.

Notes

Use fresh thyme for best flavor. Adjust salt to taste.
