A flavorful and healthy dish featuring tender chicken breasts paired with sautéed zucchini and yellow squash, topped with Parmesan and fresh parsley.

Ingredients

Protein

  • 4 pieces boneless skinless chicken breasts

Vegetables

  • 2 medium zucchini (sliced into rounds)
  • 2 yellow yellow squash (sliced into rounds)

Aromatics & Seasonings

  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika

Garnish & Cheese

  • to taste Fresh parsley, chopped
  • to taste Grated Parmesan cheese

Seasonings

  • to taste Salt and black pepper

Instructions 

  • Season chicken with salt, pepper, paprika, and half of Italian seasoning. Let sit 5-10 minutes.
  • Cook chicken in 2 tbsp olive oil over medium-high heat for 6-7 minutes per side until cooked through. Rest on a plate.
  • In the same skillet, add remaining olive oil and cook zucchini and squash for 3-4 minutes until golden, then flip and cook 2-3 minutes more.
  • Add garlic and Italian seasoning to vegetables; cook 1 minute until fragrant. Season with salt and pepper.
  • Slice chicken if desired, serve with vegetables, garnish with parsley and Parmesan. Serve hot.

Notes

For extra flavor, add a squeeze of lemon before serving.
