A flavorful and healthy dish featuring tender chicken breasts paired with sautéed zucchini and yellow squash, topped with Parmesan and fresh parsley.

Salt and black pepper
Instructions
Season chicken with salt, pepper, paprika, and half of Italian seasoning. Let sit 5-10 minutes.
Cook chicken in 2 tbsp olive oil over medium-high heat for 6-7 minutes per side until cooked through. Rest on a plate.
In the same skillet, add remaining olive oil and cook zucchini and squash for 3-4 minutes until golden, then flip and cook 2-3 minutes more.
Add garlic and Italian seasoning to vegetables; cook 1 minute until fragrant. Season with salt and pepper.
Slice chicken if desired, serve with vegetables, garnish with parsley and Parmesan. Serve hot.
Notes
For extra flavor, add a squeeze of lemon before serving.
