A delicious low-carb dish featuring tender zucchini shells filled with a flavorful chicken and vegetable mixture, topped with melted cheese.
Ingredients
Zucchini

garlic

cooked chicken breast
(shredded or chopped)

shredded mozzarella cheese

grated Parmesan cheese

Instructions
Preheat oven to 400°F (200°C).
Slice zucchinis in half lengthwise, scoop out flesh, and chop it finely.
Cook onion and garlic in olive oil until translucent, then add zucchini flesh and tomatoes; sauté 4 minutes.
Add chicken, herbs, salt, and pepper; cook 2 minutes, then cool slightly.
Mix in half the mozzarella and Parmesan cheeses. Fill zucchini shells with mixture, top with remaining mozzarella.
Bake 20-25 minutes until tender and cheese is golden. Garnish with parsley before serving.
Notes
For extra flavor, sprinkle with additional herbs or cheese before baking.
