A delicious low-carb dish featuring tender zucchini shells filled with a flavorful chicken and vegetable mixture, topped with melted cheese.

Ingredients

Zucchini

  • 4 medium zucchinis (medium-sized zucchinis)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 cup cherry tomatoes (diced)
  • 2 cups cooked chicken breast (shredded or chopped)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1/2 teaspoon dried Italian herbs
  • to taste Salt and black pepper
  • 2 tablespoons fresh parsley (chopped)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Slice zucchinis in half lengthwise, scoop out flesh, and chop it finely.
  • Cook onion and garlic in olive oil until translucent, then add zucchini flesh and tomatoes; sauté 4 minutes.
  • Add chicken, herbs, salt, and pepper; cook 2 minutes, then cool slightly.
  • Mix in half the mozzarella and Parmesan cheeses. Fill zucchini shells with mixture, top with remaining mozzarella.
  • Bake 20-25 minutes until tender and cheese is golden. Garnish with parsley before serving.

Notes

For extra flavor, sprinkle with additional herbs or cheese before baking.
