Ingredients

Grains

  • 0.5 cup quinoa (rinsed)

Legumes

  • 1 cup cooked chickpeas

Vegetables

  • 1 ripe avocado (diced)
  • 0.5 cup cherry tomatoes (halved)
  • 0.25 cup red onion (finely chopped)
  • 0.25 cup cucumber (diced)

Dressing

  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Garnish

  • 0.25 cup fresh cilantro (chopped)

Instructions 

  • Cook quinoa as per package instructions and let cool.
  • Combine cooked quinoa, chickpeas, avocado, cherry tomatoes, red onion, and cucumber in a large bowl.
  • Whisk olive oil, lemon juice, salt, and black pepper to make dressing.
  • Pour dressing over the salad and toss gently.
  • Garnish with chopped cilantro and serve chilled or at room temperature.

Notes

Feel free to add other fresh herbs or vegetables for variation.
