1.5poundsground beef
28ouncescanned whole tomatoes(don't drain)
6ouncescanned tomato paste
15ouncescanned red kidney beans(drained and rinsed)
2tablespoonschili powder(more if desired)
0.5teaspooncumin
0.5teaspoongarlic powder
1teaspoononion powder
1teaspoonkosher salt
0.25teaspoonground black pepper
1cupcolby jack cheese(shredded)
4tablespoonssour cream
2tablespoonsgreen onions(chopped)
Instructions
Cook chili: Sauté garlic and onions in olive oil, add ground beef, season, and cook until browned. Combine with tomatoes, tomato paste, beans, and spices in a slow cooker. Cook on low for 6-8 hours.
Prepare potatoes: Preheat oven to 350°F. Rinse, dry, pierce, and rub potatoes with olive oil and salt. Bake for 60-75 minutes.
Assemble: Let potatoes cool slightly, cut lengthwise, and top with chili, cheese, sour cream, and green onions. Serve immediately.
