A hearty and flavorful dish combining spicy chili with baked potatoes topped with cheese and sour cream. Perfect for a comforting meal.

Ingredients

Vegetables and Meat

  • 1 tablespoon extra virgin olive oil (for cooking and rubbing potatoes)
  • 1 tablespoon garlic (minced)
  • 1 cup yellow onion (diced)
  • 1.5 pounds ground beef
  • 28 ounces canned whole tomatoes (don't drain)
  • 6 ounces canned tomato paste
  • 15 ounces canned red kidney beans (drained and rinsed)
  • 2 tablespoons chili powder (more if desired)
  • 0.5 teaspoon cumin
  • 0.5 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 0.25 teaspoon ground black pepper
  • 1 cup colby jack cheese (shredded)
  • 4 tablespoons sour cream
  • 2 tablespoons green onions (chopped)

Instructions 

  • Cook chili: Sauté garlic and onions in olive oil, add ground beef, season, and cook until browned. Combine with tomatoes, tomato paste, beans, and spices in a slow cooker. Cook on low for 6-8 hours.
  • Prepare potatoes: Preheat oven to 350°F. Rinse, dry, pierce, and rub potatoes with olive oil and salt. Bake for 60-75 minutes.
  • Assemble: Let potatoes cool slightly, cut lengthwise, and top with chili, cheese, sour cream, and green onions. Serve immediately.

Notes

For extra flavor, add hot sauce or additional spices to the chili.
