Chilled Cucumber Yogurt Soup

A refreshing and cooling soup perfect for hot days, combining fresh cucumbers, yogurt, and herbs.

Ingredients

Vegetables

  • 4 pieces English cucumbers peeled and deseeded
  • 1 1/2 tsp garlic paste
  • 8 to 10 leaves mint leaves
  • 1 1/2 cups plain thick yogurt
  • 1 tbsp tablespoon fresh lime juice (or to taste)
  • 2 tbsp honey
  • 3/4 cup water
  • to taste Salt
  • to taste freshly ground black pepper
  • sprigs few fresh mint for garnish
  • 4 tbsp finely chopped onion for garnish
  • 3 tbsp broken and toasted walnuts for garnish

Instructions 

  • Cut cucumbers into chunks and blend with garlic, mint, yogurt, lime juice, and honey until smooth.
  • Add water and blend again, then season with salt, pepper, and additional lime juice if needed.
  • Chill the soup until ready to serve, then stir well and ladle into bowls.
  • Garnish with chopped onion, walnuts, and a sprig of mint before serving.

Notes

For extra flavor, add a drizzle of olive oil before serving.
