Ingredients

Meat

  • 2 lbs boneless, skinless chicken thighs

Sauces and condiments

  • 3 peppers chipotle peppers in adobo sauce
  • 4 cloves garlic, minced
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt

Tortillas and toppings

  • 12 pieces corn tortillas
  • 1 diced white onion
  • 1 cup fresh cilantro, chopped
  • 2 limes cut into wedges

Instructions 

  • Blend chipotle peppers, garlic, lime juice, olive oil, cumin, oregano, and salt until smooth.
  • Marinate chicken in the mixture for 2-4 hours.
  • Preheat grill or skillet to medium-high heat.
  • Cook chicken 6-7 minutes per side until internal temp reaches 165°F, then rest and slice.
  • Warm tortillas, then assemble tacos with chicken, onion, cilantro, and lime wedges.

Notes

For extra flavor, char the tortillas slightly on the grill before serving.
