Instructions
Toss chicken with chili powder, cumin, and olive oil. Grill until cooked and slightly charred, then chop.
Mix all sauce ingredients until smooth and thick. Adjust heat and salt to taste.
Warm tortillas briefly to make them pliable.
Spread sauce on tortilla, add rice, chicken, onion, tomato, and lettuce. Fold and roll tightly.
Cook rolled burrito seam-side down in a hot skillet until golden and sealed, about 1-2 minutes per side.
Slice in half and serve immediately.
Notes
For extra flavor, marinate the chicken briefly before grilling.
