Delight in these rich cookies with a crunchy almond exterior and smooth chocolate coating, perfect for any occasion.
Ingredients

Instructions
Bake raw almonds at 120°C for 30 mins, cool, then blend 60g with icing sugar and salt until fine.
Mix blended almonds with flour, cornstarch, custard powder, baking soda, then add 100g oil to form a dough. Add more oil if dry.
Divide dough into 10g pieces, wrap each around a whole almond, shape elongated.
Bake at 170°C for 10 mins, rotate, then bake 7 more mins. Cool and prepare chocolate.
Double boil chocolate and cocoa butter until melted. Dip cookies in chocolate, place on paper cups, and decorate with chopped nuts.
Notes
Ensure almonds are fully cooled before blending for best texture.
