Ingredients

Bananas

  • 1.5 cups all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 0.75 cup granulated sugar
  • 0.5 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions 

  • Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  • Mash bananas in a large bowl, then whisk in egg, oil, sugar, and vanilla.
  • Sift in flour, cocoa powder, baking soda, and salt; fold into wet ingredients.
  • Stir in 3/4 cup chocolate chips, divide batter into muffin cups, and sprinkle remaining chips on top.
  • Bake for 18-22 minutes, cool for 5 minutes before transferring to a wire rack.

Notes

Use overripe bananas for best flavor and moisture.
