Ingredients
Dry ingredients
1.5cupsold-fashioned rolled oats
1.5cupsmilk(any type)
2cupsall-purpose flour or whole wheat flour(gluten-free if needed)
1.5teaspoonsbaking powder
1.5teaspoonsbaking soda
0.75teaspoonsalt
0.75cupunsalted butter(melted and cooled, or coconut oil)
0.75cuppacked brown sugar or coconut sugar
3largeeggs(room temperature)
1.5teaspoonsvanilla extract
0.25cupssemi-sweet chocolate chips

Instructions
Line a muffin pan with paper liners and spray with nonstick spray. Combine oats and milk; let soak 10-15 minutes. Whisk dry ingredients in a bowl. Whisk wet ingredients in another bowl, then add soaked oats. Mix dry into wet, fold in chocolate chips, and let rest 15 minutes. Preheat oven to 425°F. Spoon batter into muffin cups, bake 5 minutes at 425°F, then reduce to 350°F and bake 13-15 minutes until a toothpick comes out clean. Cool in pan 15 minutes, then transfer to wire rack.
Notes
For best results, do not overmix the batter and fold in chocolate chips gently.
