Chocolate Chip Oat Muffins

Delicious and wholesome muffins packed with oats and chocolate chips, perfect for a quick breakfast or snack.

Ingredients

Dry ingredients

  • 1.5 cups old-fashioned rolled oats
  • 1.5 cups milk (any type)
  • 2 cups all-purpose flour or whole wheat flour (gluten-free if needed)
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 0.75 teaspoon salt
  • 0.75 cup unsalted butter (melted and cooled, or coconut oil)
  • 0.75 cup packed brown sugar or coconut sugar
  • 3 large eggs (room temperature)
  • 1.5 teaspoons vanilla extract
  • 0.25 cups semi-sweet chocolate chips

Topping

  • Sanding sugar (for topping)

Instructions 

  • Line a muffin pan with paper liners and spray with nonstick spray. Combine oats and milk; let soak 10-15 minutes. Whisk dry ingredients in a bowl. Whisk wet ingredients in another bowl, then add soaked oats. Mix dry into wet, fold in chocolate chips, and let rest 15 minutes. Preheat oven to 425°F. Spoon batter into muffin cups, bake 5 minutes at 425°F, then reduce to 350°F and bake 13-15 minutes until a toothpick comes out clean. Cool in pan 15 minutes, then transfer to wire rack.

Notes

For best results, do not overmix the batter and fold in chocolate chips gently.
