Delight in these moist and chocolaty muffins with a hint of orange and cinnamon, perfect for a sweet treat.

Ingredients

Wet ingredients

  • 1 cup orange juice
  • 1.5 cup coconut oil, warmed
  • 0.5 cup firmly packed brown sugar

Dry ingredients

  • 2 cups white whole-wheat flour
  • 0.5 cup rolled oats
  • 0.5 teaspoon salt
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 cup cocoa powder
  • 0.75 cup ground cinnamon
  • 0.75 cup dark chocolate, coarsely chopped

Instructions 

  • Preheat oven to 350°F (175°C) and spray muffin pan.
  • Mix juice, oil, and brown sugar until well combined.
  • Whisk together flour, oats, salt, baking powder, baking soda, cocoa, and cinnamon.
  • Combine dry and wet ingredients; fold in chopped chocolate.
  • Divide batter into muffin cups and bake for 18-20 minutes. Cool on wire rack.

Notes

For extra moist muffins, do not overmix the batter.
