A rich and creamy chocolate mousse perfect for satisfying your sweet tooth with minimal effort.

Ingredients

Eggs

  • 4 large egg yolks
  • 1/4 cup granulated sugar

Heavy Cream

  • 2 cups heavy cream (divided, plus more for topping if desired)
  • 1 pinch sea salt (optional)
  • 2 tsp vanilla extract
  • 7 oz bittersweet chocolate (chopped small)

Instructions 

  • Whip egg yolks and sugar until pale and fluffy, about 2 minutes.
  • Warm half of the cream with salt, then slowly temper egg mixture by pouring in warm cream while whisking.
  • Return mixture to saucepan, cook until thickened and reaches 160°F, then remove from heat and add chocolate and vanilla, stirring until smooth.
  • Chill mixture until cool, then whip remaining cream to stiff peaks and fold into chocolate mixture.
  • Divide into cups, chill for 2 hours, then top with whipped cream and garnish with grated chocolate.

Notes

For a richer flavor, use high-quality chocolate and chill the mousse thoroughly before serving.
