A rich and creamy chocolate mousse perfect for satisfying your sweet tooth with minimal effort.
Ingredients
Eggs

large
egg yolks
1/4
cup
granulated sugar
Heavy Cream
2
cups
heavy cream
(divided, plus more for topping if desired)

pinch
sea salt
(optional)

vanilla extract

bittersweet chocolate
(chopped small)
Instructions
Whip egg yolks and sugar until pale and fluffy, about 2 minutes.
Warm half of the cream with salt, then slowly temper egg mixture by pouring in warm cream while whisking.
Return mixture to saucepan, cook until thickened and reaches 160°F, then remove from heat and add chocolate and vanilla, stirring until smooth.
Chill mixture until cool, then whip remaining cream to stiff peaks and fold into chocolate mixture.
Divide into cups, chill for 2 hours, then top with whipped cream and garnish with grated chocolate.
Notes
For a richer flavor, use high-quality chocolate and chill the mousse thoroughly before serving.
