Delight in these easy, frozen banana bites layered with peanut butter and coated in melted dark chocolate for a perfect sweet treat.
Ingredients

ripe bananas
(sliced into 1/4 inch rounds)

natural peanut butter

dark chocolate chips

coconut oil
Instructions
Peel and slice bananas into 1/4 inch rounds. Line a baking sheet with parchment paper.
Spread about 1/2 teaspoon of peanut butter on a banana slice, top with another slice to form a sandwich. Repeat until all slices are used.
Freeze the banana sandwiches for 1 hour until firm. Meanwhile, melt chocolate and coconut oil in 30-second microwave intervals, stirring until smooth.
Dip each frozen banana bite into the melted chocolate, coating half or fully as desired. Place back on parchment and freeze for 15 minutes to set.
Store in a freezer-safe container for up to 2 months. Let thaw for 5 minutes before eating if frozen for long periods.
Notes
For easier dipping, keep the bites frozen until ready to coat with chocolate.
