Chocolate Peanut Butter Banana Bites

Delight in these easy, frozen banana bites layered with peanut butter and coated in melted dark chocolate for a perfect sweet treat.

Ingredients

Fruits

  • 3 pieces ripe bananas (sliced into 1/4 inch rounds)
  • 0.75 cup natural peanut butter
  • 0.5 cup dark chocolate chips
  • 2 teaspoons coconut oil

Instructions 

  • Peel and slice bananas into 1/4 inch rounds. Line a baking sheet with parchment paper.
  • Spread about 1/2 teaspoon of peanut butter on a banana slice, top with another slice to form a sandwich. Repeat until all slices are used.
  • Freeze the banana sandwiches for 1 hour until firm. Meanwhile, melt chocolate and coconut oil in 30-second microwave intervals, stirring until smooth.
  • Dip each frozen banana bite into the melted chocolate, coating half or fully as desired. Place back on parchment and freeze for 15 minutes to set.
  • Store in a freezer-safe container for up to 2 months. Let thaw for 5 minutes before eating if frozen for long periods.

Notes

For easier dipping, keep the bites frozen until ready to coat with chocolate.
