Enjoy a healthy and delicious chocolate protein cookie that's perfect for a quick snack or post-workout treat.

Ingredients

Dry ingredients

  • 1 cup almond flour
  • 1 cup oats (rolled)
  • 1/2 cup protein powder (chocolate flavored)

Wet ingredients

  • 1/2 cup honey
  • 1/4 cup coconut oil (melted)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 cup dark chocolate chips

Instructions 

  • Preheat oven to 350°F (175°C).
  • Mix dry ingredients in a bowl.
  • Combine wet ingredients and add to dry mixture.
  • Fold in chocolate chips.
  • Form into cookies and place on a baking sheet.
  • Bake for 12 minutes until golden brown.

Notes

For a softer cookie, slightly underbake and let cool.
