Ingredients

Sauce

  • 1 cup apple cider
  • 1 tablespoon whole-grain mustard
  • 0.5 tablespoon finely chopped fresh rosemary
  • 0.5 tablespoon finely chopped fresh thyme
  • 0.5 tablespoon finely chopped fresh sage
  • 0.5 teaspoon ground pepper (plus more to taste)
  • 0.25 teaspoon salt, divided
  • Pinch nutmeg
  • 2 tablespoons unsalted butter (divided)
  • 2 4-ounce wild salmon fillets (skin on)
  • 2 tablespoons finely diced leeks

Instructions 

  • Whisk cider and mustard in a saucepan, add herbs, salt, pepper, and nutmeg. Simmer until thickened, about 30 minutes. Stir in 1 tablespoon butter.
  • Season salmon with ΒΌ teaspoon salt. Melt remaining butter in a pan, cook salmon skin-side up for 4-6 minutes per side. Add leeks in last 2 minutes, baste with sauce, and serve.

Notes

Ensure the cider reduces enough to create a rich glaze for the salmon.
