0.25teaspoonsalt, divided
Pinchnutmeg
2tablespoonsunsalted butter(divided)
24-ouncewild salmon fillets(skin on)
2tablespoonsfinely diced leeks
Instructions
Whisk cider and mustard in a saucepan, add herbs, salt, pepper, and nutmeg. Simmer until thickened, about 30 minutes. Stir in 1 tablespoon butter.
Season salmon with ΒΌ teaspoon salt. Melt remaining butter in a pan, cook salmon skin-side up for 4-6 minutes per side. Add leeks in last 2 minutes, baste with sauce, and serve.
