These wholesome cinnamon apple oatmeal bars are perfect for a nutritious snack or breakfast on the go, combining oats, pecans, dates, and fresh apples for a delicious treat.

Ingredients

Nuts and Grains

  • 2 cups raw pecan halves
  • 2 cups old fashioned rolled oats
  • 1.5 cups pitted and halved medjool dates
  • 2 teaspoons ground cinnamon
  • 0.25 teaspoon salt
  • 2 cups chopped apples, skin on (e.g., Granny Smith)
  • 1 teaspoon vanilla extract, optional

Instructions 

  • Preheat oven to 350ºF (175ºC). Toast pecans and oats on a baking sheet for 10-15 minutes.
  • Line an 8" square pan with parchment paper. Process toasted pecans and oats with dates, cinnamon, and salt until coarse.
  • Add chopped apples and vanilla, pulse until mixture clumps together. Add water if needed.
  • Press mixture into prepared pan, smoothing the top. Bake for 20 minutes until slightly darker.
  • Cool for 10-15 minutes, then lift out and cut into 10-12 bars.

Notes

Store in an airtight container for up to a week.
