These wholesome cinnamon apple oatmeal bars are perfect for a nutritious snack or breakfast on the go, combining oats, pecans, dates, and fresh apples for a delicious treat.

2cupsraw pecan halves
2cupsold fashioned rolled oats
1.5cupspitted and halved medjool dates
2teaspoonsground cinnamon
0.25teaspoonsalt
2cupschopped apples, skin on (e.g., Granny Smith)
1teaspoonvanilla extract, optional
Instructions
Preheat oven to 350ºF (175ºC). Toast pecans and oats on a baking sheet for 10-15 minutes.
Line an 8" square pan with parchment paper. Process toasted pecans and oats with dates, cinnamon, and salt until coarse.
Add chopped apples and vanilla, pulse until mixture clumps together. Add water if needed.
Press mixture into prepared pan, smoothing the top. Bake for 20 minutes until slightly darker.
Cool for 10-15 minutes, then lift out and cut into 10-12 bars.
