A delicious and easy snack featuring roasted pumpkin seeds coated with cinnamon and sugar for a sweet and savory treat.

Ingredients

Pumpkin Seeds

  • 1 cup raw pumpkin seeds
  • 1 tablespoon extra virgin olive oil
  • kosher salt kosher salt (to taste)
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon cinnamon

Instructions 

  • Preheat oven to 350°F (175°C).
  • Dry pumpkin seeds for 30 minutes, then transfer to a baking sheet.
  • Drizzle seeds with olive oil, sprinkle with salt, and mix well.
  • Roast seeds for 20-25 minutes, stirring every 5 minutes until toasted and crisp.
  • Mix sugar and cinnamon in a bowl, then toss with roasted seeds.
  • Let cool, then store in an airtight container. Enjoy!

Notes

For extra flavor, add a pinch of cayenne pepper or vanilla sugar.
