Ingredients

chocolate protein powder
(about 32 to 34 grams)

(coconut palm sugar or brown sugar work best)
Wet Ingredients

Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix dry ingredients: protein powder, coconut flour, baking powder, and sweetener.
Whisk egg, vanilla, and peanut butter until smooth.
Combine wet and dry mixtures; fold in chocolate chunks if using.
Shape dough into balls, press with a fork, and bake for 10-12 minutes.
Cool on a wire rack before serving.
Notes
For softer cookies, slightly underbake and let cool.
